Position: Head Pastry Chef
About: Saisons Sucrées (Sweet Seasons) is a luxury pâtisserie and café, opening in New Canaan, CT, in March 2025. Inspired by the owner’s passion for sustainable agriculture, they craft innovative French pastries, breads, sandwiches, chocolates, and more, using seasonal and locally sourced ingredients. With Parisian elegance, they aim to elevate French pastry culture beyond New York City. The founder, trained at Le Cordon Bleu and experienced in Michelin-starred kitchens, seeks to create a brand rooted in excellence and creativity.
Requirements:
– Proven experience managing kitchen operations and staff in a professional environment.
– Expertise in traditional French pastry techniques, including viennoiserie, tarts, entremets, and macarons.
– Culinary degree or equivalent experience.
– Passion for quality, creativity, and exceptional presentation.
– Growth-oriented mindset with leadership and problem-solving skills.
Key Responsibilities
– Oversee the production of pastries, bread, and catering products daily.
– Collaborate on recipe development and seasonal menu changes.
– Hire, train, and manage kitchen staff, including scheduling and performance reviews.
– Maintain compliance with health, safety, and employment regulations.
– Manage inventory, place vendor orders, and oversee kitchen equipment maintenance.
– Uphold cleanliness, organization, and hygiene standards.
– Participate in management meetings to drive profitability and growth strategies.
Additional Preferences
– Social media experience or an interest in showcasing pastry work.
– Bilingual skills (English/French or English/Spanish).
– Specialty expertise in macarons, entremets, or chocolatier techniques.
