This position is offered by the Community Supervision and Corrections Department (CSCD), an agency focused on the supervision and rehabilitation of individuals within the criminal justice system. The CSCD operates in Corpus Christi and Nueces County, Texas, providing various community correctional services including residential programs. It oversees multiple facets of offender management, ensuring compliance, safety, and quality of life enhancements within their facilities. The department also manages food service operations within its residential programs, ensuring proper nutrition, hygiene, and safety standards are upheld to meet regulatory requirements and support rehabilitation efforts.

The role of Kitchen Manager within CSCD is a critical leadership position situated in an industrial kitchen environment within a correctional campus setting. This position reports to the Residential Director through the Operations Manager and is responsible for overseeing food preparation staff and kitchen operations to provide high-quality meals in large quantities. With a base pay rate of $19.95 hourly, this full-time opportunity entails significant operational oversight, including food inventory management, ordering supplies, training staff, and maintaining adherence to stringent food safety, sanitation, nutritional, and safety standards.

The Kitchen Manager must demonstrate advanced culinary skills, capable of preparing, baking, roasting, broiling, and steaming various menu items according to established recipes and guidelines. This role requires detailed attention to meal planning, portion control, food presentation and garnishing, and minimizing food waste through efficient use of overproduced food. The manager ensures that meals are served at proper temperatures, conform to feeding schedules, and meet customer satisfaction standards.

Beyond food preparation, the manager plays an essential role in maintaining a clean and safe kitchen environment by directing the cleaning and sanitizing of equipment, utensils, and work areas. They handle food receipt, storage, and proper rotation of perishable and nonperishable goods in compliance with health regulations. The incumbent will also manage documentation, including meal counts, food inventories, production records, work schedules, and temperature logs, to ensure transparency and accountability.

This position also involves emergency response duties such as administering first aid and CPR when medical staff are unavailable, highlighting a need for multi-faceted skill sets including certifications in food handling, food service management, and first aid. Job Requirements

  • Valid Corpus Christi/Nueces County Health Department Food Managers Permit at time of interview
  • Required to obtain and maintain Food Service Manager certification
  • Required to obtain and maintain food handler's permit
  • Required to obtain Red Cross First Aid Certification
  • Valid Texas Driver's License and liability insurance if using vehicles for CSCD business
  • Must not be a peace officer
  • Must not be on probation, parole, or serving a criminal sentence

Job Duties

  • Participate and oversee food preparation staff

  • Direct and train staff in the use of utensils and kitchen equipment
