The position available is that of a Sous Chef for the Republic of Texas restaurant, a key culinary outlet within Omni Corpus Christi Hotel. This role is vital to the efficient and effective operation of the kitchen and food production services. The Sous Chef reports to the Executive Chef and plays a significant role in overseeing daily kitchen operations, managing culinary staff, ensuring food quality, and maintaining high standards of sanitation and safety. This is a full-time position that requires a leadership mindset as well as deep culinary expertise. The Sous Chef will be responsible for delivering consistently high-quality dishes, scheduling kitchen staff in alignment with budget and business forecast, developing menu additions, and ensuring proper inventory and product availability.
In addition to hands-on food preparation, the role involves recruitment, onboarding, and ongoing training of culinary team members, promoting a culture of continuous improvement and professional development. The Sous Chef is also accountable for maintaining kitchen equipment, proper sanitation practices, food safety, and compliance with health standards. Collaboration is a key component of the role, requiring close communication with both the front-of-house management and the Executive Chef to ensure seamless operations and an exceptional guest dining experience. Daily meetings with kitchen and service staff help address operational concerns and refine menu offerings.
This position demands a highly motivated self-starter with excellent organizational and communication skills, the ability to multitask in a fast-paced environment, and a passion for culinary excellence. Experience in high-volume fine dining operations, particularly steakhouses, is preferred. The candidate must be proficient in batch and quantity cooking, possess strong eye-hand coordination for using kitchen equipment, and stay current with culinary trends and new concepts. A culinary degree or college education is favored, along with Serve Safe certification. Job Requirements
- High school diploma or equivalent
- at least 2 years of culinary management experience
- ability to lead and manage kitchen staff
- excellent communication skills
- ability to work in a fast-paced environment
- knowledge of food safety and sanitation standards
- proficiency in culinary techniques and kitchen equipment
- ability to multi-task
- food handler certification
Job Qualifications
- At least 2 years previous culinary management experience in a high volume, fine dining restaurant operation
- steakhouse experience preferred
- proven culinary skills and ability to lead, develop, and motivate staff
- ability to teach employees how to greet guests and courteously solve requests
- ensure that all health standards are consistently maintained
- ensure all safety and security policies and procedures are followed
- excellent written and verbal communication skills
- familiarity with batch and quantity cooking
- ability to multi-task and work in fast paced environment
- ability to produce high volumes of work while maintaining quality
- eye/hand coordination needed to use all kitchen equipment
- highly motivated self-starter focused on quality, organization, cleanliness, and teamwork

- college education and/or culinary degree preferred
- serve safe certified food manager
Job Duties
- Deliver consistent high-quality products to patrons of Republic of Texas
- scheduling of staff according to budget and business forecast
- develop additions to the menu
- recruitment, on-boarding and continuous training of culinary associates
- responsible for product availability for restaurant
- directs proper sanitation of all kitchen facilities and equipment
- ensure that all kitchen equipment is in good working order
- directs proper maintenance of all walk-in coolers (rotation of food products and cleanliness)
- monitors and has hands on control over daily food production
- monitors for safety of staff
- maintains a good working relationship with Front of the House Management and The Executive Chef
- conducts daily meetings with servers and kitchen staff to discuss additions to the menu and to resolve any operational concerns
- knows expectations and ensures that staff understand them and that they execute said expectations within the proper guidelines
- checks and controls sign-in and sign-out procedures for kitchen staff
- conducts kitchen department meeting
- responsible for maintaining accurate payroll records for culinary staff
- other duties assigned by Republic of Texas leadership
