About: Marriott Charleston is seeking a diligent and detail-oriented Kitchen Manager to oversee the operations of the kitchen department, ensuring efficiency and adherence to quality standards. The role involves implementing policies, managing food costs, conducting staff training, and maintaining compliance with health and sanitation guidelines in a dynamic hotel setting.
Requirements: Operate Kitchen department within budgetary guidelines and in response to actual conditions; Assist in the development and implementation of policies and controls on issues relating to Kitchen operations; Control food cost by training kitchen staff on proper methods of food preparation and handling; Complete or assist with administrative duties associated with personnel and payroll matters; Assist with the development and conduct effective training programs for staff; Understand and enforce adherence to health department and hotel sanitation guidelines; Comply with all recipes and product specifications; Maintain effective communication within the Kitchen; Attend meetings as scheduled and conduct regular inspections of kitchen areas; Assist in menu development; Inspect incoming food items for quality and compliance; Prepare reports and communications as assigned.
