Requirements: At least three years of experience in upscale sushi operations; experience in the preparation and production of sushi in a high-volume restaurant; excellent knife skills; knowledge of HACCP controls and current industry and food trends; proficiency in Microsoft Office; knowledge of safe and sanitary food handling principles; ability to lift, bend and carry up to 40 pounds
