Position: Executive Sous Chef Cake Artistry – Pastry – Aria

Aria Resort & Casino is currently seeking a skilled and dedicated Executive Sous Pastry Chef to lead high-quality dessert creation for restaurants and banquets, specializing in cake artistry. The role involves overseeing pastry operations, training staff, staying updated on industry trends, crafting diverse dessert menus, and researching innovative recipes, under the guidance of the Executive Pastry Chef and property Food and Beverage leadership. Requirements: At least two years of experience in the pastry industry, including large production and high-volume kitchens; Extensive knowledge in cake decorating; Ability to sketch designs for various themes per season; Experience in managing employees under a collective bargaining agreement; Previous high-volume restaurant or luxury/fine-dining experience; Pastry instructor experience with high-end production; Knowledge of gelato preparation, chocolate and sugar work, doughs, formulation, and ratios calculation; Expertise in artistic chocolate and sugar showpieces; Familiarity with high-end luxury pastry trends
