Position: Chef, Pastry (Chocolatier)

About: Fontainebleau Las Vegas is seeking a dedicated Pastry Chef, Chocolatier to assist the Executive Pastry Chef in overseeing the Chocolate Room, Banquets, special assignments, and all supporting venues and outlets across the resort. This position entails creating menus, recipes, and programs for the daily operation of all chocolate and confection goods in F&B outlets and banquets following the standards set by the Executive Pastry Chef.

Requirements: Requires 3 years’ experience in a high volume/high-quality luxury pastry production kitchen and familiarity with classic and modern techniques; ability to assist in creating new seasonal menus; must have a record of producing special chocolate amenities and showpieces; proficient knowledge in chocolate making and a passion for creativity; at least 3 years of experience in a supervisory role; culinary/pastry training degree preferred; advanced knowledge of chocolate work, sanitation, and cost control; ability to work efficiently in a team environment; basic knowledge of Microsoft Office software
