Position: Assistant Sous Chef
About: Desert Diamond Casinos and Entertainment is seeking a Supervising Chef to work under the direct supervision of the Sous Chef, providing guidance to all Food & Beverage staff. The role involves menu creation, labor control, food cost management, scheduling, and overseeing daily operations of all food venues. Knowledge of Title 4 (Arizona liquor law) is essential, along with adherence to Tohono O’odham Gaming Enterprise (TOGE) alcohol training and internal controls.
Requirements: High school diploma or GED plus 4 years kitchen experience with at least 2 years of lead cook experience; culinary education may be substituted for 1 year of lead cook experience. Must be 18 years of age or older. No felony, theft, or stealing convictions. Ability to pass pre-employment drug/alcohol screening and background investigation. Must obtain and maintain a gaming license. Must demonstrate knowledge of culinary methods, food preparation equipment, financial reports, menu creation, global food trends, Microsoft Word and Excel, organizational skills, food ordering, and procurement. Must be able to communicate clearly, obtain Food Handlers card, TIPS certification, and deliver outstanding guest service in English. Capable of working in a fast-paced environment, supervising staff, handling multiple tasks, and working well under pressure.
