Position: Executive Pastry Chef

About: The Executive Pastry Chef role at UCLA Dining Services involves providing team leadership for all aspects of bakery preparation and scheduling food production requirements in a high-volume bakery. The position requires supervising bakery career staff, coordinating and preparing bakery items, maintaining quality standards, and fostering positive customer relations and team dynamics. The Executive Pastry Chef follows established timelines for bakery production to support UCLA Dining Services departments.

Requirements: 6-8 years experience in a culinary leadership position with increasing responsibility; 3 years experience leading a culinary operation with at least 3 revenue centers; Ability to read, understand, speak, and write English sufficiently; Skill in organizing and monitoring assignments; Management and supervision of multi-functional staff; Ability to train and lead a production team in a high-volume bakery; Culinary knowledge of bakery inventory, recipes, and production methods; Knowledge of food safety rules and procedures; Proficiency in using computers and relevant software for food production management; Ability to develop and perfect bakery menus and recipes; Mediation skills for conflict resolution; Valid California Driver’s License; Ability to conduct on-site inspections and lift items weighing up to fifty pounds; Effective communication and interaction in a high-volume public contact setting
