Requirements: Required to take and pass a Food Service Sanitation course within ninety (90) days of accepting the position. Proficient in various food preparation techniques including Hollandaise preparation, Knife Skills, Proper Sanitation/Food Handling Techniques, Product I.D., Blanch Shocking, Grilling/Sautéing/Poaching, Meat Temperatures, Thermometer Use, Tools handling, Rice Cookery, Recipe following, Egg Cookery, Potato Cookery, Stocks preparation, and Kitchen Equipment utilization and maintenance. Must be able to work in a smoke-filled environment, sit and stand for prolonged periods, and obtain and maintain a PA Harness license.
