The current opportunity at Holbrook House is for a talented Pastry Chef who is passionate about creating exceptional desserts and baked goods. This role goes beyond basic pastry preparation; it involves innovation, quality control, and active collaboration with the Chef Team and service staff to deliver desserts that meet high standards of taste, presentation, and consistency. The Pastry Chef is responsible for preparing, baking, and finishing an array of pastries, breads, cakes, cookies, and plated desserts in accordance with established recipes and standards. Attention to detail, creativity, and excellent technical skills are essential to thrive in this position.
Additionally, the Pastry Chef will assist in the development of new desserts and seasonal pastry items that reflect the restaurant's commitment to using fresh, seasonal ingredients with global influences. The role also requires maintaining proper mise en place, including scaling, mixing, portioning, and storing ingredients properly to ensure efficiency and quality. Operating and maintaining key pastry equipment such as mixers, ovens, proofers, and sheeters is another vital responsibility.
Quality assurance is paramount, so the Pastry Chef must consistently monitor baking times and temperatures to prevent under- or over-baking, and maintain cleanliness and organization of the pastry station in compliance with hygiene and food safety standards. Stock rotation, proper labeling of ingredients, and waste minimization are crucial practices to uphold. The role extends to inventory management and ordering of supplies, ensuring that the pastry department runs smoothly and efficiently.
Holbrook House values leadership and mentorship; therefore, the Pastry Chef may be called upon to train, mentor, or supervise junior pastry assistants or apprentices. The ideal candidate will be a self-starter with excellent problem-solving abilities and the capacity to work independently as well as part of a team. This role requires flexibility in scheduling, including availability for days, evenings, and weekends, aligning with the restaurant and events calendar.

- a current California Food Handlers Certificate

- high level of professionalism and a “can do” attitude
- ability to work independently and as part of a team
- must be a proven self-starter capable of finding solutions with minimal supervision
- have regular access to e-mail and the internet

- have the stamina to work up to 10+ hours - standing and walking between service areas for the duration of the shift

Job Duties
