Job Requirements

  • Minimum of 2-3 years experience working as a sushi chef in a professional kitchen
  • Apprenticeship or equivalent culinary education or experience
  • Proficient in filleting and preparing fish and seafood
  • Active California Food Handlers Certification
  • Open availability for swing shifts, weekends, and holidays
  • Must be at least 21 years old
  • Ability to obtain and maintain California gambling employee permit
  • Eligibility to work in the U.S.
  • Pass drug test, criminal background, and credit checks

Job Qualifications

  • Extensive knowledge of filleting and preparing various fish and seafood
  • Proficient in creating sushi rolls, nigiri, and sashimi with attention to detail
  • Strong knife skills and precision in ingredient preparation
  • Active California Food Handlers Certification
  • Open availability to work swing shifts, weekends, and holidays
  • Must be at least 21 years old
  • Ability to obtain and maintain California gambling establishment employee permit
  • Eligibility to work in the U.S.
  • Ability to pass drug test, background, and credit checks

Job Duties

  • Expertly prepare sushi rolls, nigiri, sashimi, and other sushi dishes according to established recipes and standards
  • Fillet and portion various types of fish and seafood with precision and consistency
  • Ensure freshness and proper storage of all ingredients used in sushi preparation
  • Assist in maintaining adequate stock levels of ingredients, tools, and equipment
  • Arrange and present sushi dishes with meticulous attention to detail for aesthetic appeal
  • Adhere to food safety and sanitation guidelines, maintaining a clean and organized work area
  • Collaborate with kitchen staff to ensure smooth operation and timely service during busy periods
