The Sushi Chef role at JOEY is a critical position responsible for preparing high-quality sushi dishes that enhance the overall dining experience. Sushi Chefs at JOEY are passionate about culinary artistry and committed to consistently delivering world-class products. This position requires crafting every dish on the sushi menu efficiently in a fast-paced, high-pressure environment, demonstrating skillful use of various preparation and cooking methods including chopping, slicing, grilling, sautéing, frying, and more.
Candidates for this role typically earn between $16.90 and $28.00 per hour, with eligibility to participate in the company’s tip pool, which in average provides between $5.00 and $12.00 per hour in tips. The role offers both full-time and part-time employment opportunities, accommodating flexible schedules to support diverse lifestyles and career goals.
Sushi Chefs are tasked with preparing ingredients, managing inventory levels, maintaining cleanliness and safety standards, and ensuring food quality and presentation meet JOEY’s rigorous standards. They also support kitchen operations through opening and closing duties and coordinate closely with other kitchen stations to ensure smooth service. Safety compliance in handling kitchen equipment and food is paramount to the role.

- having or ability to obtain valid local and/or state food handling permits
- ability to work confidently in a fast-paced, dynamic environment
- ability to walk and stand for prolonged periods, bend, reach, stretch frequently, perform repetitive manual tasks, and lift and carry up to 50 pounds

Job Duties
- Prepare all ingredients and food products to complete prep lists, meet minimum and optimal inventory levels or PAR, and follow rotation standards and recipes
- Use various preparation and cooking methods to ensure quick and accurate creation of sushi menu dishes according to JOEY recipes
- coordinate with other stations when necessary
- Maintain clean, hygienic, and safe preparation and cooking areas
- Clean, organize, and maintain proper functioning of refrigerators, refrigerated drawers, ovens, preparation and dry storage areas
- Perform assigned opening, closing, and any additional tasks to support kitchen team success
- Follow all instructions and guidelines for safe use of kitchen equipment and cleaning products
- Report any equipment or maintenance failures to management immediately
- Follow all food service and handling safety precautions and procedures
