The role of a Sushi Chef at JOEY Restaurants is pivotal to the company’s success. This position is full-time or part-time and offers a competitive wage scale ranging from $16.90 to $28.00 per hour, with eligibility to participate in the company’s tip pool. On average, employees in this role earn an additional $5.00 to $12.00 per hour in tips, although exact distributions can vary. Sushi Chefs at JOEY are responsible for preparing high-quality sushi dishes while managing the fast-paced and demanding nature of the kitchen environment. The role involves executing precise and consistent preparation of all sushi menu items under pressure while maintaining the highest standards of food safety, cleanliness, and quality control.

In this role, Sushi Chefs will be deeply involved in prepping a variety of ingredients and food products to meet specific prep lists, par levels, and recipe standards established by the restaurant. They utilize various cooking and preparation techniques such as washing, chopping, cutting, grilling, roasting, sautéing, and frying, coordinating with other kitchen stations to ensure smooth operations and timely delivery of dishes. A key responsibility is maintaining clean, sanitized, and safe prep and cooking areas, reinforcing the company’s strong commitment to health and safety protocols. Additionally, Sushi Chefs help in cleaning and organizing refrigerators, cooler drawers, ovens, prep and dry storage areas, and complete assigned side work and closing duties to support their team.

The ideal candidate possesses between 1 and 3+ years of culinary experience but high-potential candidates with less experience are encouraged to apply. They must have or be able to obtain valid local and/or state Food Handler and California Responsible Beverage Service certifications. A passion for hospitality and a proven record of creating world-class hospitality experiences is essential, alongside the ability to thrive in a dynamic, fast-paced environment. Physical stamina is required, as this role involves prolonged periods of standing and walking, frequent bending, reaching, stretching, repetitive manual tasks, and lifting up to 50 pounds.

Job Duties

  • Prep all ingredients and food products to fulfill prep lists, par levels, and recipe standards
  • Utilize various prep and cooking methods to ensure the quick, precise creation of menu items according to JOEY recipes
  • Maintain prep and cooking areas in a clean, sanitary, and safe manner
  • Clean, organize, and maintain refrigerators, cooler drawers, ovens, prep and dry storage areas
  • Complete assigned side work and closing duties
  • Stock, clean, and organize line stations
  • Follow all instructions and guidelines for safe usage of kitchen equipment and cleaning compounds
  • Report equipment problems and maintenance issues immediately
  • Follow all food service and handling safety precautions and procedures
