Job Requirements
- high school diploma or equivalent
- minimum 5 years of kitchen management or executive chef experience
- proven experience in high-volume retail, entertainment, hospitality, or restaurant venue
- ability to manage and develop a team
- valid ServSafe certification
- strong communication and interpersonal skills
- ability to adhere to food safety standards
- capable of working in a fast-paced environment
- ability to perform physical tasks such as walking, bending, standing for extended periods, and lifting with assistance
Job Qualifications
- 5 plus years of kitchen management or executive chef experience
- bachelor s or culinary degree preferred
- experience in high-volume retail, entertainment, hospitality, or restaurant venue required
- extensive experience in banquet style events
- experience managing and developing teams required
- current ServSafe certification required
- ServSafe instructor certification or ability to be certified preferred
Job Duties
- adhere to the company s mandated food and beverage menu and purchasing programs
- maintain budgeted revenue, costs of sales, labor, supplies, as well as operating cash flow as it relates to food operations
- review monthly profit and loss statements and make adjustments as necessary
- work with the operations team and sales staff to plan, supervise, and execute for all events including preparation, service, and cleanup
- assist with cooking when needed
- estimate food consumption and make purchases as appropriate from specified food program
- schedule staff efficiently to accommodate business volume shifts
- work with management to recruit, hire, train, and retain kitchen staff
- develop key staff including sous chefs and lead cooks
- ensure product quality, freshness, and presentation meet company standards
- supervise and oversee the preparation, portioning, garnishing, and storage of all food
- facilitate and manage all kitchen equipment maintenance
- implement and conduct sanitation audits and cleaning schedules to comply with local Department of Health regulations
- report critical issues to General Manager
