As a Sous Chef at Vic's River Grill, you will play a pivotal role in ensuring the kitchen operates smoothly and efficiently while maintaining the highest culinary standards. This leadership position requires a hands-on culinary professional who is happy, pleasant to work with, and enjoys engaging with people. The sous chef will work directly under the Executive Chef to oversee many culinary functions, including food purchasing, preparation, sanitation, training, and cost control. This role demands excellent knife skills, a keen eye for detail, and the ability to manage and train kitchen staff efficiently. You will be responsible for ensuring that all food and products meet the restaurant's standards for quality, presentation, portioning, and safety. Your work will also include monitoring sanitation practices, maintaining cleanliness schedules, and following HACCP guidelines to ensure a safe and sanitary kitchen environment.
Additionally, the Sous Chef will work collaboratively with restaurant managers to plan and price menu items, create standard recipe cards, and manage inventory and ordering processes. Leading a team of cooks, you will help to implement new cooking techniques, coordinate special functions, and fill in for the Executive Chef when needed, guaranteeing seamless kitchen operations. Job Requirements
- High school diploma or equivalent
- Three to five years of leadership experience in a culinary setting
- Proficient knife skills
- Ability to follow policies and procedures
- Strong communication and interpersonal skills

Job Duties
- Promote work and act in a manner consistent with the mission of Vic's River Grill
- Monitor sanitation practices to ensure employees follow standards and regulations
- Maintain cleaning schedules for kitchen floors mats walls hoods equipment and food storage areas
- Check the quality of raw or cooked food products to ensure standards are met
- Check and maintain proper food holding and refrigeration temperature control points
- Control food cost and usage by following proper requisition product storage standard recipes and waste control procedures
- Instruct cooks or other workers in preparation cooking garnishing or presentation of food
