This full-time Sous Chef position is based at Concordia University, located at 800 North Colombia, Seward, NE 68434. The role offers a competitive hourly wage ranging from $22.00 to $25.00, reflecting the candidate's experience and skills. The working schedule is primarily from 12:00 pm to 8:30 pm with days that may vary, offering some flexibility while maintaining a consistent full-time engagement. The Sous Chef acts as a critical support to the Executive Chef by preparing and cooking food following approved recipes and production standards. This position involves coordinating and supervising the activities of cooks and other food-service associates, ensuring high standards of food quality, safety, and sanitation. The Sous Chef is responsible for managing kitchen operations in the absence of the Executive Chef, demonstrating leadership in a busy, high-volume culinary environment typical of an academic campus setting.

Essential duties include cooking and food preparation, supervising the kitchen staff through recruitment, training, scheduling, and performance management tasks, and maintaining strict compliance with food safety regulations. The role demands excellent organizational skills to handle inventory management, monitor food production and waste, and ensure timely service during peak hours. Job Requirements

Job Duties

  • Cook and prepare food following approved recipes and production standards
  • ensure all deadlines are met based on production orders
  • supervise hourly food service associates including interviewing, scheduling, payroll, training, counseling, and recommending disciplinary actions as appropriate
  • store food following all corporate, state, and federal food safety and sanitation procedures
  • ensure proper food handling, presentation, portion control, and maintenance of appropriate serving temperatures
  • maintain sanitation of equipment, supplies, and utensils
  • clean workstation thoroughly before leaving area
  • keep display equipment clean and free of debris during meal service
  • interact with customers to resolve complaints in a friendly, service-oriented manner
  • relay relevant information to supervisor
  • demonstrate complete understanding of daily menu items and explain them accurately to associates and customers
  • monitor inventory and deliveries of products and supplies
  • track product production, consumption, and waste
  • inform supervisor when supplies or products are low
  • perform other duties as assigned
