The Chinese Cuisine Sous Chef, Operations role is a pivotal position within gategroup’s culinary team, responsible for assisting the Executive Chef in designing and preparing meals specifically tailored to Chinese, Taiwanese, and Hong Kong airline customers. This role also requires experience with Japanese culinary profiles, adding to the diversity and sophistication of the menu offerings. The Sous Chef will provide culinary expertise and leadership, ensuring that quality food services are delivered consistently while maintaining compliance with food safety and sanitation standards. This position involves managing food production efforts, supervising a team of up to 40 employees including Head Cooks and Specialty Cooks, and optimizing kitchen operations in a high-volume environment. Job Requirements
- Associates degree in culinary arts or equivalent certification
- Minimum 1-3 years experience as a Chef or Sous Chef
- Minimum 7 years experience as a cook
- Experience in Chinese Cuisine for at least 3 years
- Supervisory experience in high volume or food production environment preferred
- Ability to work in fast-paced, deadline-driven settings
- Proven leadership and team management abilities
- Ability to train and provide feedback to employees
- Excellent time management, organizational and communication skills
- Must complete company required training including ServSafe
- Compliance with company policies and procedures
- Ability to stand, bend, lift, and move intermittently during 10+ hour shifts
- Capable of lifting 25 pounds or more
- Available for rotating schedules exceeding 55 hours per week
Job Qualifications
- Associates degree in Culinary Arts or Culinary Arts certification preferred
- Minimum 1-3 years experience as a Chef or Sous Chef
- Minimum 7 years experience as a cook
- At least 3 years experience in Chinese Cuisine
- Previous supervisory experience in high volume, manufacturing, food production, restaurant, or catering environments preferred
- Experience in in-flight catering or high-volume food service preferred
- Ability to cook meals according to detailed specifications
- Strong leadership skills and team management experience
- Effective communication and organizational skills
- Experience with menu design is a plus
- Basic computer skills and familiarity with Microsoft Office products
- ServSafe Certification preferred
- Excellent written and oral communication skills
- Bi-lingual in Mandarin is a plus
Job Duties
- Assist the Executive Chef in designing and preparing meals for Chinese, Taiwanese, and Hong Kong airline customers
- Ensure compliance with food safety and sanitation requirements including FDA, USDA, and HACCP regulations
- Supervise food production for quality and quantity, managing up to 40 employees
- Prepare daily production sheets, assign tasks and optimize schedules
- Manage inventory, order raw materials, and produce extra meals as needed
- Train and monitor employees on work procedures to maximize productivity and minimize costs
- Ensure company wage and hour policies are followed including rest and meal breaks
