The role of Restaurant General Manager at White Lodging is a senior leadership position focused on driving the success of food and beverage operations within one of the company’s premium hotel restaurants. The Restaurant General Manager will lead all aspects of the restaurant’s operations, ensuring a seamless and elevated dining experience that spans multiple meal periods in a high-volume, premium hotel environment. The successful candidate will be responsible for managing the restaurant’s full financial performance, including P&L oversight, budgeting, labor and food cost control, forecasting, and implementing strategic revenue initiatives to consistently surpass profitability goals. Collaboration is key in this role; the Restaurant General Manager will work closely with the Executive Chef and beverage team to uphold menu quality, ensure smooth kitchen and dining room operations, and foster a robust wine and beverage program. They will also champion guest satisfaction and uphold the restaurant's brand reputation by delivering outstanding service experiences and resolving any guest concerns promptly and professionally.

Additionally, the Restaurant General Manager will collaborate cross-functionally with hotel corporate leadership, marketing, and events teams to align promotional activities and business development strategies that drive sustained growth. Job Requirements

  • Experience as a restaurant general manager food and beverage director or senior restaurant leader in a high-volume hotel or upscale restaurant environment
  • Proven ability to manage P and L budgets labor costs and food costs
  • Strong leadership skills in team recruitment development and performance management
  • Excellent communication and organizational skills
  • Ability to work in a fast-paced and dynamic environment
  • Knowledge of upscale dining operations and wine and beverage programs
  • Commitment to delivering exceptional guest experiences
  • Flexible availability to work multiple meal periods and shift schedules

Job Qualifications

  • Proven experience as a restaurant general manager food and beverage director or senior restaurant leader managing multiple managers across diverse front-of-house and back-of-house teams in a high-volume hotel or upscale restaurant environment strongly preferred
  • Demonstrated ability to own restaurant P and L manage labor and food costs and drive profitability in a full-service hotel dining or upscale restaurant setting
  • Strong background in upscale dining operations with deep knowledge of wine food and beverage pairings and beverage program management Sommelier certification a plus but not required
  • Experience managing multiple meal periods across a full-service hotel restaurant prior oversight of In-Room Dining or banquet food and beverage operations a significant advantage
  • Process-driven operational leadership approach with exceptional organizational and execution skills you build systems that work and hold your team accountable to them
  • Demonstrated success developing restaurant managers and associates driving positive team culture and building the internal promotion pipeline that defines a healthy restaurant operation

Job Duties

  • Lead all aspects of hotel restaurant operations delivering a seamless elevated dining experience across multiple meal periods in a high-volume premium hotel food and beverage environment
  • Recruit direct and develop a team of restaurant managers and front-of-house associates fostering a culture of excellence accountability internal promotion and long-term professional growth
  • Drive restaurant operational performance through consistent execution of systems processes service standards and White Lodging operational protocols across every shift and every meal period
  • Own the full financial performance of the restaurant managing P and L budgets labor cost food cost forecasting and strategic revenue initiatives to consistently achieve and exceed profitability goals
  • Partner closely with the Executive Chef and beverage team to ensure menu quality kitchen and dining room operational flow and a strong wine and beverage program culture throughout the restaurant
  • Champion guest satisfaction and hotel restaurant brand reputation ensuring service excellence at every touchpoint and resolving all guest concerns with urgency and professionalism
  • Collaborate cross-functionally with hotel corporate leadership marketing and events teams to align on promotions activations and hotel restaurant business development goals
