The role of Pastry Helper at the St. Petersburg Yacht Club is a critical part of the culinary team, specifically within the Pastry Kitchen. This position is responsible for assisting the Pastry Chef in the overall production of pastries and baked goods, ensuring that all items meet the club's exacting standards of taste, presentation, and quality. The Pastry Helper plays a key role in preparing desserts for a variety of dining experiences, including everyday service, banquets, weddings, and special club events. The Pastry Helper will engage in a variety of tasks, including the organization and planning of production activities, preparing pastries according to established standards, monitoring quality control of ingredients and finished products, and ensuring proper storage and refrigeration practices. This role also involves continuous communication with kitchen superiors and collaboration with storeroom personnel to maintain inventory and product quality. Creativity and innovation are encouraged as the Pastry Helper contributes to the development of new dessert offerings.

Candidates for this position should hold a high school diploma or equivalent and possess either formal culinary school education or relevant culinary experience. Experience in a similar production environment is preferred, along with knowledge of pastry department operations and cake decorating techniques. Physical demands of the job include the ability to stand and walk for extended periods, lift and carry heavy items, and work in both indoor and outdoor settings depending on the event needs.

Job Requirements

  • High school diploma or equivalent
  • Some culinary school or related experience
  • Two or more years of experience in a similar culinary environment
  • Knowledge of pastry and baking department operations
  • Experience with cake decorating
  • Ability to maintain food safety and sanitation standards
  • Strong communication skills
  • Physical ability to lift up to 75 pounds and perform physically demanding tasks
  • Availability to work in indoor and outdoor settings
  • Willingness to work flexible hours including events
  • Positive and cooperative attitude

  • Origination and production knowledge
  • Knowledge of culinary department duties

Job Duties

  • Participate in the preparation and execution of all production
  • Planning and organization of all items produced in the Pastry kitchen
  • Prepare all items according to set standards
  • Ensure timely execution of all meal functions
  • Monitor incoming food products to ensure proper quality and assist storeroom personnel in quality control
  • Monitor all refrigeration and dry storage for proper handling and rotation
  • Keep an open communication with superiors
  • Plan and develop new desserts for restaurants, banquets and special functions, i.e., weddings
  • Coach and teach all staff members as a continuing process to ensure a smooth operation and maintain a high-level standard in the Pastry Kitchen
  • Maintain a high level of sanitation and safety
