Job Requirements

  • ACF certified executive chef or culinary degree
  • Eight to ten years experience in executive chef role
  • Extensive menu development and costing experience
  • Five plus years experience in multi-outlet food production management
  • Strong communication and delegation abilities
  • Hands-on working knowledge in food production
  • Experience mentoring and coaching culinary teams

Job Qualifications

  • ACF certified executive chef or culinary degree from recognized institute
  • Eight to ten years experience as executive chef in reputable hotels or resorts
  • Extensive menu development and costing experience
  • Five plus years of multi-outlet food production management
  • Outstanding communication and delegation skills
  • Hands-on knowledge in all aspects of food production
  • Ability to mentor and coach culinary staff
  • Visionary leadership for culinary team

Job Duties

  • Create menus reflecting seasonal availability and restaurant concepts
  • Develop food and beverage merchandising programs for grab and go and food retail elements
  • Analyze menus and procedures to improve profit and quality
  • Develop daily, seasonal, and special event menus
  • Forecast purchases and maintain food costs within budget
  • Lead safety, efficiency, and sanitary food production
  • Develop purchase specifications and ensure food inspection standards
  • Monitor Stewarding department activities
  • Design training and development plans for staff
  • Provide culinary demonstrations and set recipe standards
  • Create creative amenity programs
  • Foster a culture of one team and employee empowerment
  • Maintain communication with general manager, director of food and beverage, and human resources
  • Partner with corporate chef to ensure program consistency
