Job Requirements

  • Minimum high school diploma
  • previous experience in dietary department of a health care facility preferred
  • ability to read, write, and use mathematics and units of measurement
  • knowledge of menus, recipes, food purchasing, preparation and storage
  • ability to supervise and manage
  • knowledge of community policies and procedures and job descriptions
  • knowledge of ADA, state, infection control, health department, and OSHA regulations
  • current license or certification as a dietician, ADA, diet technician, chef, or dietary manager
  • willingness to participate in continuing education as required by state law

Job Qualifications

  • hold license or certification as a dietician, ADA, diet technician, chef, or dietary manager meeting state requirements
  • graduation from a food service supervision course meeting ADA standards or equivalent with sufficient classroom instruction and on-the-job counseling by a dietician
  • continuing education as required by state law

Job Duties

  • Assist in development of dietetic policies and procedures
  • supervise the receiving and storage of food
  • supervise food preparation and service
  • schedule food service team members
  • assist the dietician in training programs and provide follow-up recommendations
  • visit residents and gather information on food preferences
  • maintain records including meal census, diets served, menus, purchase records, nutritional assessments, care plans, and staffing patterns
  • hire, train, evaluate, and supervise food service employees within budget
  • plan menus ensuring compliance with nutritional standards and regulations
  • review resident diet information and collaborate with residents, families, nursing staff and dieticians
  • supervise cleaning procedures to maintain sanitary conditions
  • establish practice of serving hot food hot and cold food cold
  • observe for over-production and improper food preparation
  • instruct new residents about meal service times and methods
  • consult wellness director, executive director, and dietician regarding special diets and dietary issues
  • participate in quality assurance, infection control, and safety committees
  • review food handlers permits
  • conduct monthly temperature and biweekly food waste studies
  • keep records of menus served, substitution menus, special diet rosters, number of meals served, and food cost records
