Job Qualifications

  • One to two years of culinary experience
  • Experience working in a high volume casual dining restaurant environment preferred
  • Introductory level food knowledge
  • Basic level of knife cutting skills
  • Fundamentals of dry and moist cooking methods
  • Food preparation skills and knowledge of HACCP standards
  • Working knowledge of kitchen equipment such as grill, fryer, oven and slicer
  • Basic level skills in handling basic food groups
  • Ability to adapt to changes in menu items and cooking techniques
  • Ability to work in a fast-paced environment
  • Ability to complete multiple tasks under time constraints
  • Working knowledge of weights, measures and cooking techniques
  • Good communication and customer service skills
  • Ability to speak, read and comprehend instructions and policy documents
  • Professional appearance and demeanor
  • Ability to lift or move 40 pounds
  • Ability to bend, twist and stand for extended periods
  • Comfortable working in hot environments and frequent hand immersion in water and chemicals

Job Duties

  • Follow recipes and product directions for preparing, seasoning, cooking, tasting, carving and serving food items which may include soups, meats, vegetables, desserts and other food and beverage products
  • Taste products, follow menus, estimate food requirements, check production and keep records to accurately plan production requirements and requisition supplies and equipment as needed
  • Measure and mix ingredients
  • Wash, peel, cut and shred fruits and vegetables
  • Handle organic and specialty ingredients
  • Maintain quality control for all products, including monitoring freshness of product daily
  • Acquire a working knowledge of ingredient specifications and seasonal variability
  • Coordinate food output with the other cooks
  • Clean and sanitize work stations and equipment
  • Practice excellent food safety and sanitation practices and comply with HACCP standards
  • Stock, date, rotate and check temperature of product
  • Fully understand the menu, ingredients and nutritional content, and communicate that information clearly to customers
  • Receive, stock, move and lift food and beverage products and supplies
  • Comply with HMSHost and franchise policies as well as applicable regulatory agencies including rules of the Airport Authority
