Job Requirements

  • Prior experience working in sushi-focused restaurants, demonstrating strong knowledge of traditional and fusion sushi preparation techniques
  • Exceptional people skills
  • High degree of flexibility and adaptability
  • Must be able to manage multiple projects and work well under pressure
  • Strong interpersonal, verbal and communication skills
  • Must be approachable and have good leadership skills
  • Must be at least 21 years of age
  • Must be able to lift and carry 40 pounds (including trash bags)
  • Position requires prolonged standing, bending, twisting and repetitive hand and wrist motion
  • Work with hot, cold, and/or hazardous materials and equipment
  • A valid driver's license, proof of insurance and non-slip shoes are required

Job Duties

  • Maintain high-quality sushi and Japanese cuisine standards while ensuring food safety compliance
  • Oversee all phases of sushi and menu item production, including ingredient prep, inventory, ordering, storage, and timely execution of dishes
  • Mentor and train sushi cooks and kitchen staff on knife skills, rolling techniques, plating, and proper seafood handling
  • Create weekly work schedules to balance team capacity with expected sales and service volume
  • Maintain a clean, organized, and fully operational kitchen
  • ensure all equipment is properly maintained to support smooth service
  • Recruit, hire, and onboard kitchen staff with a focus on culinary skill development and adherence to sushi standards
  • Monitor and control food and labor costs while optimizing ingredient usage and minimizing waste
