Job Requirements

  • 1-3 years experience in traditional sushi preparation and presentation
  • ability to take direction and provide direction when necessary
  • ability to interact positively with the public
  • knowledgeable in Asian and/or Japanese cuisine
  • experienced with traditional sushi preparation and various forms including rolls, temaki, nigiri, sashimi, futomaki, including choice of ingredients, design, and presentation
  • expert knife skills
  • innovative presentation of dishes
  • excellent communication and organizational skills
  • ability to work in other kitchen stations in the absence of a line cook or station chef
  • knowledgeable in health department standards, HACCP and weights and measures requirements

Job Duties

  • Responsible for the production of various sushi items such as maki, nigiri, sashimi, and other related sushi products
  • maintain cleanliness and organization of sushi station
  • order and receive raw materials and dry goods
  • maintain daily production records
  • perform monthly inventories and training of new teammates as required
  • complete opening and closing duties efficiently and safely, using the correct procedures
  • complete all assigned daily, weekly, and monthly cleaning duties
  • be a team player, have lots of fun and support other teammates
  • ensure all operating standards including food safety and quality are strictly adhered to
  • filleting fish and preparing sushi to fill sushi case and customer orders
  • responsible for production, ordering and receiving of all sushi
  • responsible for inventory management
  • responsible for sushi station, safety, hygiene, and sanitation
  • responsible for creating new dishes, assisting with menu creation
