Job Requirements
- High school diploma
- Minimum three years lead experience as sous chef or equivalent
- Current sanitation certification or ability to obtain within six months
- Safe Food Handling certification
- Experience managing high volume and fast paced kitchens
- Ability to work flexible hours including nights, weekends, holidays
- Ability to lift or carry up to 50 pounds
- Ability to stand for extended periods and perform physical kitchen tasks
- Knowledge of food safety and sanitation protocols
- Strong organizational and communication skills
Job Qualifications
- High school diploma
- Culinary Arts degree preferred
- Current or obtainable sanitation certification within 6 months
- Safe Food Handling certification
- Minimum of three years experience as a sous chef or equivalent in a high-volume restaurant
- Over five years experience managing high-volume commercial kitchens
- Experience in fine dining and culinary leadership preferred
- Proficiency in multiple kitchen stations and cooking methods
- Advanced knife skills
- Inventory ordering and waste management skills
- Proficient in recipe production
- Knowledge of culinary and market trends
- Strong organizational and time management skills
- Proficient with computers and inventory management software
- Excellent kitchen and staff management skills
- Ability to calculate figures and perform math functions
- Strong communication skills
- Ability to work flexible schedules including nights, weekends, and holidays
Job Duties
- Oversee daily culinary operations and supervise production of daily specials
- Delegate tasks to kitchen staff and spot-check product for quality
- Assist on the line during peak service times
- Assist in menu development including daily, weekly, and special event menus
- Ensure quality, cost-effectiveness, and profitability of food production
- Monitor holding, storage operations, and food service sanitation standards
- Support cost controls and procurement of kitchen equipment and supplies
- Prepare and serve foods for therapeutic diets
- Act as liaison between Executive Chef and back-of-house staff
- Conduct pre and post shift walkthroughs to ensure compliance with cleanliness and organization
- Enforce food safety policies and procedures
- Ensure compliance with all federal, state, and local kitchen regulations
- Provide safety training and maintain equipment
- Follow sanitation procedures, including personal hygiene and proper food storage
- Ensure kitchen and storage facilities are sanitary and organized
