Job Requirements
- Must obtain and maintain valid licenses and certifications per Federal, State and Gaming regulations
- Must successfully pass background check
- Must successfully pass drug screening
- Must be at least 21 years of age
- Ability to work varying shifts and time schedules
- Ability to operate kitchen equipment safely and effectively
- Ability to comply with health and safety standards
Job Qualifications
- Minimum of 8 years progressive food preparation experience or culinary arts degree with 4 years progressive experience and at least 1 year supervisory experience
- Knowledge of federal, state and local laws, codes and regulations
- Familiarity with standard safety and sanitation practices
- Ability to prepare stocks, soups, mother sauces, and various meats including veal, pork, beef, lamb, poultry, game and seafood
- Strong understanding of kitchen operations
- Demonstrated organizational skills and budgeting experience
- Excellent communication and leadership skills
Job Duties
- Create an atmosphere that induces guests to choose Hard Rock Hotel and Casino Sacramento at Fire Mountain for gaming entertainment
- Hire, train, motivate, evaluate and supervise staff to ensure guidance and resources are provided
- Establish and maintain training and development procedures to achieve superior guest service standards
- Maintain department objectives, standards, guidelines and budget to ensure proper management
- Monitor food purchasing, staffing, food preparation and inventory to control costs and waste
- Monitor and evaluate food preparation techniques and tasting to ensure food quality and consistency
- Assist in developing menu changes to ensure variety and quality
