Job Requirements
- Culinary degree
- Minimum 4 years of progressive experience in hotel or related culinary field
- Servsafe sanitation certification
- Strong leadership and communication skills
- Ability to work under pressure
- Physical capability to handle medium work involving lifting up to 50 pounds
- Experience with various kitchen equipment including slicers, choppers, grinders, and cooking equipment
- Ability to maintain composure and provide effective problem-solving
- Knowledge of food and labor cost controls
- Must maintain high personal grooming and dress standards
- Availability to work flexible and long hours as needed
Job Qualifications
- Culinary degree
- At least 4 years of progressive experience in a hotel or related field
- Knowledge of kitchen cutlery
- Experience with automatic slicers
- Familiarity with buffalo chopper and blenders
- Proficient with band saw and meat grinder
- Skilled in gas fired cooking equipment
- Experienced with steam kettles and electric griddles
- Use of deep fat fryers, ovens, tilt fryers, toaster, scales, and can openers
- Knowledge of Carter Hoffman
- Ability to work long hours when required
- Physical ability to exert up to 50 pounds of force occasionally, and/or 20 pounds constantly
- Strong communication skills
- Ability to evaluate and select among alternative actions quickly and accurately
- Capacity to work well under stressful, high-pressure situations
- Maintain composure and objectivity under pressure
- Effective at problem-solving in the workplace
- Ability to assimilate and adjust complex information
- Skilled at listening, understanding, and clarifying concerns
- Competent with financial data and basic arithmetic
- Servsafe sanitation certification
- Knowledge of ice carving, tallow and sugar work
Job Duties
- Supervise kitchen staff including training and scheduling
- Ensure all food is prepared properly and on time per company specifications
- Prepare weekly food sales forecast
- Schedule kitchen employees according to business needs and forecasts
- Assess food and labor costs to meet or exceed departmental objectives
- Enforce cleanliness standards throughout kitchen and inspect all kitchen areas
- Assist all chefs when needed
- Take an active role in menu change considerations
- Consult with other chefs on special menus, presentation, and pricing
- Coach, counsel, and mentor assistant chefs and cooks
- Conduct periodic sanitation meetings
- Attend F&B, safety, and hotel staff meetings in lieu of the Executive Chef
- Issue portion control foods to outlets
- Cut meat, poultry, and seafood according to business demand
