Job Requirements

  • high school diploma or equivalent
  • at least 4 years of progressive experience in a culinary or food service role or a culinary degree with at least 2 years of experience in hotel or related field
  • knowledge of food and beverage preparation techniques
  • familiarity with health department sanitation laws and liquor regulations
  • ability to work long hours including standing and exerting physical effort

Job Qualifications

  • at least 4 years of related progressive experience or a culinary graduate with at least 2 years of progressive experience in a hotel or related field
  • knowledge of food and beverage preparation techniques, health department rules and regulations, liquor laws and regulations
  • ability to maintain a warm and friendly demeanor at all times
  • effective verbal and written communication skills with employees and guests

Job Duties

  • work with other food and beverage managers and keep them informed of issues as they arise
  • keep immediate supervisor fully informed of all problems or matters requiring attention
  • coordinate and monitor all phases of loss prevention in kitchen areas
  • prepare and submit required reports in a timely manner
  • monitor quality of all food product and presentation
  • ensure preparation of required reports including wage progress, payroll, revenue, employee schedules, and quarterly action plans
  • oversee daily operation of kitchen and food production areas including hot food, bakery, and cold food pantry
  • make cooks aware of daily forecasts and customer counts for preparation
  • respond to guest complaints in a timely manner
  • ensure compliance with standard operating procedures in all outlets
  • ensure compliance with requisition procedures
  • conduct staff performance reviews according to standards
  • implement and monitor corporate promotions including buffet and three-meal concepts
  • comply with local health department sanitation laws
  • compute daily food cost
  • collaborate with Director of Food and Beverage to create and implement menus
  • assess food portion size, visual appeal, taste and temperature
  • check stations at end of shifts for food storage and sanitation
  • verify food purchases for proper ordering, quality and price
  • oversee preparation, sanitation, inventory, log reports, and food cost reports daily
  • prepare daily production sheets
  • cut meat, poultry, and seafood according to business needs
