Job Requirements
- Weekend availability
- Full-time availability for 40 hours per week
- Experience working as sous chef
- Ability to manage labor and food cost budgets
- Food safety certification
- CPR and First Aid certification
- Passion for working with food
- Ability to work under stressful conditions
- Strong communication skills
- Detail oriented
- Comfortable with established systems and problem solving
Job Qualifications
- Experience as sous chef in restaurants with daily changing menus
- Successful track record in managing labor and food cost budgets
- Proven ability to create and implement back of house operating systems
- Experience training and developing staff
- Knowledge of high-end kitchen environments and numbers-oriented chains
- Ability to run an exceedingly clean kitchen
- Strong relations with front of house staff
- Certified in CPR and First Aid
- Serve Safe certified
- Passionate about food and service
- Strong leadership and communication skills
Job Duties
- Develops new menu items under direction of owner and documents recipes and procedures
- ensures all food meets quality and presentation standards
- cooks soups, sauces and meats according to DERU standards
- resolves customer complaints passed up from staff or requests assistance from owner
- knows many regulars by name and understands their dining preferences
- orders and oversees inventory of everything except office supplies and liquor
- teaches staff classes including Welcome to the Roadhouse, Back of House Orientation, and Basic Food Safety
- completes training passport within stated timeframes and lives the Training Compact
- leads weekly DOR huddles with staff
- establishes and maintains good communication and positive working relationships with Managing Partner, Chef, Service Director, and front of house staff
- ensures certification in CPR and First Aid and maintains Serve Safe certification
