This particular role is for a Sous Chef at one of Accor's properties, with an annual salary ranging from $74,000 to $77,000 USD. The Sous Chef plays a critical leadership role in the kitchen, overseeing all stages of food preparation and service at the hotel’s restaurants, banquets, and employee cafeteria. The incumbent ensures the highest standards of food quality, consistency, sanitation, and cost control are met, leading a team of kitchen staff through effective delegation and supervision. Responsibilities include supervising kitchen staff, training and scheduling employees, preparing food sales forecasts, and maintaining cleanliness and safety in compliance with Fairmont and Accor standards. The Sous Chef also plays a collaborative role in menu development, special event planning, and portion control.

Beyond daily kitchen operations, the Sous Chef at Accor must approach all interactions with a friendly and service-oriented attitude, maintain high personal grooming standards, and comply with organizational policies to ensure efficient hotel operations. Job Requirements

  • Culinary degree
  • At least 4 years of progressive experience in a hotel or related field
  • Ability to exert up to 50 pounds of force occasionally and/or 20 pounds constantly
  • Ability to convey information and ideas clearly
  • Ability to evaluate and select among alternative courses of action quickly and accurately
  • Ability to work well in stressful, high-pressure situations
  • Ability to maintain composure and objectivity under pressure
  • Effectiveness in handling problems in the workplace
  • Ability to assimilate complex information from disparate sources and adjust as needed

Job Duties

  • Supervise kitchen staff including training and scheduling
  • Ensure all food is prepared according to company specifications at the appropriate time
  • Prepare weekly food sales forecasts
  • Schedule kitchen employees according to business needs and forecasts
  • Assess food and labor costs to meet or exceed departmental objectives
  • Enforce cleanliness standards throughout the kitchen
  • Inspect all kitchen areas
  • Assist all chefs when needed
  • Take an active role in all menu change considerations
  • Consult with other chefs on special menus, presentation, and pricing
  • Coach, counsel, and mentor assistant chefs and cooks
  • Conduct periodic sanitation meetings
  • Attend food and beverage, safety, and hotel staff meetings as required
  • Issue portion control foods to outlets
  • Cut meat, poultry, and seafood according to business demand
