Job Requirements
- Culinary degree
- At least 4 years of progressive experience in a hotel or related field
- Ability to exert up to 50 pounds of force occasionally and/or 20 pounds constantly
- Ability to convey information and ideas clearly
- Ability to evaluate and select among alternative courses of action quickly and accurately
- Ability to work well in stressful, high-pressure situations
- Ability to maintain composure and objectivity under pressure
- Effectiveness in handling problems in the workplace
- Ability to assimilate complex information from disparate sources and adjust as needed
- Effective listening and understanding skills
- Ability to work with and understand financial information and basic arithmetic
- Completion of Servsafe sanitation course

- Experience with kitchen cutlery
- Experience with automatic slicers
- Experience using buffalo chopper
- Experience using blenders
- Experience operating band saw
- Experience using meat grinder
- Knowledge of gas-fired cooking equipment
- Knowledge of steam kettles
- Experience with electric griddles
- Experience operating deep fat fryers
- Experience using ovens
- Experience with tilt fryers
- Knowledge of toaster use
- Experience using scales
- Experience with can openers
- Experience with Carter Hoffman
- Completion of Servsafe sanitation course
- Skills in ice carving, tallow, and sugar work
Job Duties
- Supervise kitchen staff including training and scheduling
- Ensure all food is prepared according to company specifications at the appropriate time
- Prepare weekly food sales forecasts
- Schedule kitchen employees according to business needs and forecasts
- Assess food and labor costs to meet or exceed departmental objectives
- Enforce cleanliness standards throughout the kitchen
- Inspect all kitchen areas
- Assist all chefs when needed
- Take an active role in all menu change considerations
- Consult with other chefs on special menus, presentation, and pricing
- Coach, counsel, and mentor assistant chefs and cooks
- Conduct periodic sanitation meetings
- Attend food and beverage, safety, and hotel staff meetings as required
- Issue portion control foods to outlets
- Cut meat, poultry, and seafood according to business demand
