- Previous experience in banquet culinary operations
- Ability to work flexible hours including evenings and weekends
- Knowledge of state and local health regulations
- Strong communication skills
- Physical ability to stand and move for extended periods
- Ability to manage and lead a team effectively

Job Duties
- Order and requisition banquet products in a timely manner and appropriate quantities
- Coordinate, plan and supervise production and presentation of food at banquet events
- Manage and participate in daily banquet culinary operations including meal preparation and food quality supervision
- Analyze banquet event orders to plan food and beverage portions
- Perform daily walkthrough inventory to determine production needs and product prioritization
- Assign production duties to staff and conduct line checks for dinner service
- Meet daily with line cooks to ensure production standards
- Properly use, clean, breakdown and maintain kitchen equipment
- Maintain food quality standards including consistency and presentation
- Coordinate proper food storage according to standard procedures
- Direct employees in proper service techniques
- Assist with expediting dinner service
- Perform end-of-night walkthroughs
- Document and review kitchen management log book information daily
- Control cleanliness and sanitation for entire kitchen
- Manage and oversee all kitchen stations and walk-ins
- Practice, train, monitor and maintain sanitation standards according to health guidelines
