Job Requirements
- minimum of one year culinary management experience
- minimum of two years fine-dining culinary experience
- knowledge of Chinese cooking techniques
- must possess and maintain ServSafe Food Manager Certification
- effective communication skills
- ability to multitask and work hands-on in fast-paced kitchen
- must be at least 21 years old
- ability to obtain UAIC Tribal Gaming License
Job Qualifications
- minimum of two years of fine-dining culinary experience
- minimum of one year of culinary management experience
- knowledge of Chinese cooking techniques and ability to work all stations in a Chinese kitchen
- must possess and maintain an active ServSafe Food Manager Certification
- ability to communicate effectively in both written and verbal forms
- ability to read and organize kitchen tickets for timely production
- ability to multi-task
- ability to work hands-on in high-volume, three-meal period kitchen environments
- must be at least 21 years of age
- must obtain UAIC Tribal Gaming License
Job Duties
- practice, support, and promote Thunder Valley Casino Resort's ELITE service mission and adhere to AAA Four Diamond standards
- supervise, coordinate, train and oversee staff in all food preparation and presentation
- maintain quality and quantity control, par levels, and product in sheets
- provide input and suggestions for menu revisions and daily operations
- assist in the creation of the weekly schedule for kitchen staff and special events
- operate and oversee use of equipment and kitchen appliances and coordinate with engineering for repairs
- maintain standards of sanitation, kitchen hygiene, and food safety
- check quality of raw and cooked food products to meet specifications
- record production and operational data accurately
- manage financial reporting related to kitchen operations
- ensure knowledge of emergency procedures
- maintain grooming and uniform standards
- promote teamwork and effective communication with all managers
- follow standard operating procedures, recipe books, and guidelines
- ensure all necessary supplies are available to maintain quality
- adhere to health department rules and HACCP standards
- keep kitchen and equipment clean, safe, and hazard-free
