Job Requirements
- Must have schedule flexibility including nights and weekends
- Ability to lead a team of employees through training, mentoring, and discipline
- Passion for classic and contemporary pastry approaches
- Ability to multitask in a fast-paced environment
- Knowledge of profitability, quality assurance, and cost control including reviewing monthly profit and loss and purchasing
- Experience managing all aspects of kitchen operation and production
- Commitment to maintaining established Dante standards
Job Qualifications
- 1-2 years experience in high-volume or fine dining pastry environment with at least one year of management experience
- Superior knowledge of pastry techniques including principles of starches, fats, sugars, liquids, eggs, and flavorings
- Ability to multitask and work efficiently under pressure in a fast-paced environment
- Positive interaction skills to promote teamwork and professionalism among supervisors, management, coworkers, and guests
- Ability to produce accurate, complete, and high-quality work in a timely manner
- Proficient in reading and interpreting business, technical, and regulatory documents
- Skilled in writing reports, correspondence, and procedure manuals
- Competent in calculating figures such as discounts, proportions, and percentages
- Commitment to practicing food safety procedures
- Leadership capabilities including training and motivating the pastry team
- Strong organizational and time management skills
- Culinary training or degree preferred but not required
Job Duties
- Support Executive Chef in overseeing pastry menu design and production
- Manage quality assurance and cost control for pastry department
- Lead and inspire pastry staff through training, mentoring, and discipline
- Monitor and maintain standards of cleanliness, organization, and food safety
- Handle employee relations and foster a positive team environment
- Review monthly profit and loss statements and manage purchasing to ensure profitability
- Manage all aspects of kitchen operation and production related to the pastry station
