Job Duties
- Cutting, trimming, and boning carcass sections into cooking cuts such as roasts, steaks, chops, stew cubes, and grinding meat
- Working out by-products including lamb necks, riblets, and veal products, ensuring freshness
- Breaking down veal and lamb carcasses
- Cutting and weighing steaks and chops for individual servings
- Shaping and tying roasts and filling showcase displays with cut meat
- Receiving, inspecting, and storing meat deliveries
- Informing Meat Manager about stock status and shortages
- Providing customers with information about various meat cuts and preparation methods
- Preparing convenience items for the showcase such as kabobs, stir-fry, stuffed and marinated products
- Learning Assistant Manager responsibilities for potential future advancement
