Job Duties
- Learns all wok recipes, cook times, and cooking techniques per Din Tai Fung's procedures
- checks the ingredient quality prior to beginning cooking
- cooks the ingredients in accordance with Din Tai Fung's recipes
- plates the final product in accordance with Din Tai Fung's plating guidelines
- prepares and cuts garnishes for wok line items
- labels all items in accordance with Health Department regulations and Din Tai Fung procedures
- attends monthly staff meetings and wok meetings
- keeps all kitchen areas clean and sanitized
- organizes items within the walk-in coolers and freezers
- lifts and moves boxes, bags, chairs, and tables up to 50 pounds
- assists with regular deep cleaning of the kitchen
- maintains confidentiality regarding all proprietary information including recipes and standard operating procedures (SOPs)
