Job Duties

  • Learns all wok recipes, cook times, and cooking techniques per Din Tai Fung's procedures
  • checks the ingredient quality prior to beginning cooking
  • cooks the ingredients in accordance with Din Tai Fung's recipes
  • plates the final product in accordance with Din Tai Fung's plating guidelines
  • prepares and cuts garnishes for wok line items
  • labels all items in accordance with Health Department regulations and Din Tai Fung procedures
  • attends monthly staff meetings and wok meetings
  • keeps all kitchen areas clean and sanitized
  • organizes items within the walk-in coolers and freezers
  • lifts and moves boxes, bags, chairs, and tables up to 50 pounds
  • assists with regular deep cleaning of the kitchen
  • maintains confidentiality regarding all proprietary information including recipes and standard operating procedures (SOPs)
