Job Requirements
- High school diploma or equivalent
- At least five years of culinary experience in high-volume kitchens
- Minimum two years experience as a saucier or lead cook
- Excellent knowledge of French culinary techniques
- Strong leadership and team management skills
- Ability to work flexible hours including nights and weekends
- Strong organizational and multitasking abilities
- Commitment to food safety and sanitation standards
- Ability to stand for long periods and work in a fast-paced environment
Job Qualifications
- Five plus years of culinary experience in high-volume settings such as large hotels, banquet halls, or premium catering
- Minimum two years specializing in the Saucier station
- Deep knowledge of classical French techniques including Roux, Monter au beurre, and Deglazing
- Familiarity with modern applications such as foams, fluid gels, and stable plant-based emulsions
- Strong attention to detail and commitment to maintaining quality
- Ability to work efficiently under demanding conditions and strict timelines
- Strong mathematical skills for accurate recipe scaling
- Flexibility to work evenings and weekends
- Culinary degree or diploma is a plus
Job Duties
- Lead the daily production of all stocks including brown, white, fish, and vegetable stocks and the five mother sauces using high-capacity kettles and specialized equipment
- Perform rigorous taste-testing and viscosity checks to ensure every batch meets flavor, color, and texture standards
- Oversee and participate in the preparation and cooking of high-quality dishes according to established recipes and standards
- Manage a team of prep cooks, delegating tasks, managing timing, and maintaining organization under pressure
- Monitor and reduce waste of expensive wine bases and proteins to maximize ingredient yield
- Maintain impeccable sanitation standards and ensure safe cooling and storage of large volumes of hot liquids following health regulations
