Job Requirements

  • Must be at least 18 years of age
  • Minimum of 1 year of food prep or related work preferred
  • Previous supervisory experience preferred
  • Experience interacting with inmates is a plus
  • Ability to motivate and supervise inmates and team members to achieve quality and quantity food production
  • Must be able to obtain a food safety certification
  • Ability to work independently with limited supervision
  • Ability to exercise good judgment and tact in a correctional work environment
  • Must be able to follow basic safety procedures and policies
  • Must qualify for and maintain correctional facility security clearance
  • This role may require physical demands such as lifting, bending, pushing, pulling, and extended walking or standing
  • Uniforms and personal protective equipment (PPE) may be required

Job Duties

  • The Kitchen Supervisor at Marion Correctional Institution is responsible for supervising inmates to ensure meal and food items are prepared in accordance with production plans
  • This role involves training workers, assigning tasks, and coordinating work to enhance operational efficiency
  • The Kitchen Supervisor will also ensure the sanitation of the facility and uphold personal safety by adhering to all standards and regulations
  • Adhere to and maintain food preparation and production guidelines according to Aramark standards
  • Review and approve production and temperature logs
  • Supervise inmates in food preparation and tray assembly
  • Ensure timely and efficient meal service, ensuring Aramark guidelines are met
  • Participate in meal preparation and serving
  • Print and distribute recipes and ensure proper portions and special dietary needs are met
  • Ensure that all food items are stored safely and organized in a hazard-free environment
  • Adhere to security policies and ensure storage areas are locked at all times
  • Ensure all kitchen tools, equipment, and keys are returned to secure areas
  • Scheduling & Supervision:
  • Develop and manage work and sanitation schedules for cooks, inmates, and food service workers
  • Supervise and evaluate employees, promoting teamwork, efficiency, and growth
  • Inventory & Maintenance:
  • Assist in inventory management and properly receiving and storing food and food-related items
  • Requisition orders as needed and ensure accurate inventory tracking
  • Maintain logs for maintenance of kitchen equipment and perform preventative maintenance
  • Follow HACCP policies and procedures for proper food handling and storage
  • Ensure all food safety and temperature logs are completed, implementing corrective action as necessary
  • Participate in the preparation, storage, and assembly of meals according to the 5 P’s (Participation, Pulls, Production, Portion Control, and Postproduction)
