Job Requirements
- Minimum two years’ experience as an assistant manager or received a degree with hospitality/culinary focus
- hotel operational exposure (i.e. F&B) preferred
- experience with a luxury or ultra-luxury property or brand preferred
- required to speak, read, and write English, with fluency in Spanish preferred
- must be able to exert physical effort in transporting up to 50 pounds, endure various physical movements throughout the work areas, reach up and down, remain stationary at times throughout work periods, and communicate satisfactorily with guests and co-workers
- ability to work 8-12 hour shifts, 5-7 days per week, in noisy and sometimes close conditions
- ability to maintain confidentiality of guest information and pertinent hotel data
Job Qualifications
- Diploma or some college or an equivalent combination of education and work-related experience
- current and valid ServSafe Food Protection Manager Certification
- current and valid Responsible Beverage Service Certification and Alcoholic Beverage Control (ABC) Server ID
Job Duties
- Provide exceptional service and ensure guest satisfaction with dining experiences
- manage a team of food and beverage associates ensuring brand standards and required sequence of service components are executed with precision
- maintain complete knowledge of and comply with all departmental policies, service procedures and standards
- schedule associates and prepare payroll documents to ensure associates are properly compensated
- ensure that standards are maintained at a superior level on a daily basis
- manage guest relations and ensure guest satisfaction
- maintain complete knowledge of all liquor brands, beers, and non-alcoholic selections available in restaurant
- maintain the characteristics and description of every wine/champagne by the glass and major wines on the wine list
- oversee designated glassware and garnishes for drinks
- know all menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation, and prices
- manage daily menu specials and 86'd items
- maintain dining room layout, table/seat/station numbers, proper table set-ups, room capacity, hours of operation, price range and dress code
- monitor P.O.S. and manual system procedures
- track daily house count, arrivals/departures, and VIPs
- coordinate scheduled in-house group activities, locations, and times
- ensure correct maintenance and use of equipment
- strictly abide by state liquor regulations
- check storage areas for proper supplies, organization, and cleanliness
- establish par levels for supplies and complete requisitions
- requisition linens/skirting needed for business and assign transport duties
- meet with the Chef to review daily specials and update associates
- coordinate with Front Desk for house count and arrivals
- prepare and adjust weekly work schedules
- enforce attendance and manage associate punctuality
- coordinate proper breaks
- assign work and side duties
- monitor station preparation
- conduct pre-shift meetings
- inspect grooming and attire
- ensure materials and equipment readiness
- monitor associate performance and service quality
- inspect table set-ups and restaurant environment
- manage host stand cleanliness and organization
- review reservation book and pre-assign tables
- ensure sufficient menus and wine lists
- check pick-up and side stations
- assist host with guest seating
- manage waiting lines
- prompt guest needs anticipation and response
- be knowledgeable about hotel services and local attractions
- handle guest complaints
- monitor guest reactions and service feedback
- oversee order status and timely delivery
- ensure tables are cleared and reset
- maintain cleanliness and condition of equipment and work areas
- assist restaurant associates
- answer outlet phone with proper etiquette
- manage P.O.S. system and cashiering procedures
- manage and approve void checks
- assist servers with problem payments
- issue manual checks as needed
- run system-closing reports
- complete closing duties
- provide formal training and conduct ongoing training
- give performance feedback and counsel associates
- foster cooperative working climate
- prepare and submit payroll and tip distribution records
- complete maintenance work orders
- document information in logbook
- review assignments and follow-up with assistant manager
- exhibit friendly and courteous manner
- perform other duties as required
