Job Requirements
- High school diploma
- Class II Gaming License issued from the Lummi Nation Gaming Commission
- must be at least 21 years of age
- Washington State Food Handlers Card
- MAST Alcohol Service Card
- minimum 2 years of experience as a supervisor, dishwasher or a combination of the two, preferably in a high-volume setting
- strong multitasking and organizational skills with the ability to prioritize under pressure
- excellent verbal communication and teamwork abilities
- basic culinary knowledge
- understanding of food storage, safety and sanitation standards
- flexible availability, including evenings, weekends, and holidays

Job Duties
- Manage a general cleaning schedule so that the food service areas meet or exceed the IHS health inspection requirements
- review kitchen and restaurant service needs from stewarding throughout the shift and ensure all requirements are met according to specifications
- direct staff in maintaining the cleanliness of the back of house areas, which include the main kitchen, storage areas, and washing areas
- ensure food preparation areas, walk-in coolers, walls, floors, equipment and storage areas are organized and maintained in a sanitary manner
- organize and conduct shift and departmental meetings, advising staff of forecasted expectations
- determine staffing levels and equipment needs
- prepare equipment set-up sheets and ensure follow-through on banquet support needs required from stewarding
