Job Requirements

  • High school diploma or equivalent
  • Minimum 3 years of experience in a full service high-volume kitchen
  • Proven leadership ability in culinary operations
  • Familiarity with food safety and sanitation standards
  • Knowledge of labor laws and payroll management
  • Strong communication and teamwork skills
  • Ability to manage P&L and control food and labor costs

  • More than 3 years of experience as chef in full service high-volume restaurant

Job Duties

  • Opens and closes the line
  • Performs precise line checks and facility walks with proper documentation
  • Runs high volume service periods from expo or wheel position to ensure food quality and presentation is up to standards
  • Participates in EcoSure and health inspections ensuring a safe production environment
  • Responsible for hiring, developing back of house employees, managing schedules and reporting payroll hours
  • Partners with Executives in Charge on managing P&L, food cost, labor, inventory control, and restaurant performance
  • Assists in ordering and invoicing of product
  • Communicates consistently with front-of-house team to ensure adherence to guidelines
