Job Requirements
- 4 plus years of management experience
- 7 plus years of foodservice experience
- ability to train and manage a large staff
- able to stand for 10-14 hour shifts
- knowledge of opening and closing procedures
- capable of producing accurate monthly inventories
- proficient in POS systems
- able to obtain and maintain necessary licenses and certifications per local gaming regulations
- possess leadership, team building and implementation skills
- experienced in high volume food sales

- minimum 5 years experience in multi-unit food and beverage or casino/hotel operations

- exhibit superior technical and natural cooking abilities
- knowledgeable of food and beverage service standards, storeroom procedures, and cooking methods
- bilingual preferred
Job Duties
- Create and maintain an upbeat and productive kitchen culture
- project a positive attitude and respect towards employees and food
- conduct ongoing training focusing on safety and sanitation
- provide feedback and direction to the chef team
- participate in weekly Food & Beverage management meetings
- collaborate with management to increase guest counts and loyalty
- oversee staffing and recruitment including hiring and maintaining appropriate staffing levels
- establish and implement a comprehensive training system for all kitchen employees
- conduct bi-annual performance reviews of Sous Chefs and ensure yearly reviews for all kitchen staff
- maintain accurate employee documentation including disciplinary and counseling records
- develop and execute management development plans and promote internal growth
- work with management team to maximize sales and control food and labor costs
- analyze monthly P&L statements and implement kitchen action plans
- monitor daily labor reports and minimize overtime
- conduct weekly food cost assessments and monthly physical inventories
- handle other assigned duties as needed
