Job Duties
- Oversee all pastry and bread production for a high-volume cafe ($5M annual volume) and a 42-seat fine-dining concept
- Manage, train, and inspire a production team of 8–15 bakers, fostering a culture of respect and professional growth
- Scale recipes and production processes efficiently to meet high demand while maintaining uncompromising "from-scratch" standards
- Direct the aesthetic vision for all pastry offerings, ensuring products align with the brand’s high-end, destination-worthy image
- Maintain a "player-coach" presence, arriving early (approx. 5:00 a.m.) to oversee quality control and participate in production
- Collaborate closely with the Director of Hospitality and Director of Operations to ensure seamless service and brand consistency
