Job Requirements
- Specialized or technical training
- At least five years of culinary management experience
- Formal training at accredited culinary institute
- Supervisory chef experience in high volume diversified food service
- Working knowledge of health and sanitation regulations
- Valid CA driver's license and participation in DMV Pull Notice System
- Availability to work weekends, evenings, and holidays full onsite
- Strong commitment to university's values and operational excellence.
Job Qualifications
- Specialized or technical training in culinary arts
- Five years of culinary management experience
- Formal training at an accredited culinary institute
- Supervisory level chef experience in high volume diversified food service operation
- Working knowledge of health and sanitation regulations
- Valid CA driver's license
- Certification in kitchen sanitation procedures preferred
- Seven years of experience preferred

Job Duties
- Responsible for all culinary aspects of all food and beverage outlets of the hotel including the lab and employee cafeteria
- Creates and implements hotel restaurant and private event menus
- Develops recipes, sources ingredients, prices menu items, trains staff, and ensures consistent menu execution
- Reviews sales data and menu engineering reports and adjusts menus accordingly
- Ensures cost of goods and food inventories meet budgeted standards
- Maintains food presentation aligning with industry innovation and brand standards
- Ensures adherence to LA Department of Public Health food safety codes maintaining high inspection scores
- Creates or updates culinary and operational standards as needed
- Develops culinary creations for hotel VIP and guest amenities
- Oversees kitchen scheduling, labor targets, staffing, training, ordering, and production
- Hosts regular operational meetings with culinary team
- Reviews guest satisfaction trends and addresses feedback properly
- Collaborates with hospitality and hotel management to improve operations and revenue growth
- Ensures compliance with all relevant laws, regulations, and university policies
- Leads recruitment, hiring, orientation, training, and performance evaluation of culinary staff
- Manages vendor invoice tracking, labor tracking, food cost, labor cost, and inventory control
- Builds positive relationships with department heads and participates in meetings
- Works with HR on employee relations including hiring, counseling, and termination
- Aligns culinary initiatives with USC's Unifying Values and sustainability goals
- Provides customer service, problem resolution, and consistent follow-up
- Provides professional culinary advice and quality control evaluations
- Oversees computerized menu management system
- Directly or indirectly supervises subordinate staff
- Maintains compliance with university policies and applicable laws
- Oversees food ordering and maintains budgetary guidelines
- Inspects food storage and sanitation of kitchen and storage facilities
- Researches new developments in food service methods and equipment
- Develops and administers effective communication plans within the unit
- Performs other related duties as assigned.
