Job Requirements
- Proof of chef apprenticeship completion or equivalency
- Eight to ten years experience in culinary and management roles in 4 or 5 star hotels or equivalent
- Written references from previous employers
- Ability to read, interpret and demonstrate recipe preparation for meat, fish, and sauces
- Demonstrated quantity cooking skills and use of advanced kitchen equipment
- Extensive knowledge of food handling procedures and USPH codes preferred
- Bachelor’s degree in hospitality management, business administration, or related field or international equivalent, or verifiable culinary certification
- Ability to communicate in English effectively
- Physical ability to perform duties including standing, walking, lifting up to 50 pounds, and participating in emergency procedures
- Full range of vision, hearing, and mobility requirements for safety and operational needs
Job Qualifications
- Proof of chef apprenticeship completion or equivalency
- Eight to ten years of culinary and managerial experience in luxury hotels or high-volume food service
- Ability to interpret and prepare recipes using advanced cooking techniques
- Extensive knowledge of food handling, hygiene, and public health standards
- Proficiency in quality control and kitchen equipment usage
- Bachelor’s degree in hospitality management or related field or equivalent certification
- Certification such as Certified Executive Chef (CEC), Food Service Handler’s Certification, and HACCP course completion preferred
- Proficiency in English for communication and documentation
- Demonstrated financial management skills including cost control and headcount optimization
Job Duties
- Provide overall leadership and management of the ship’s galley operations
- Ensure galley areas operate in compliance with company operating standards and USPH regulations
- Monitor food quality, production, and consistency and take corrective actions immediately
- Conduct regular inspections and testing in all service areas
- Manage food inventory to maintain adequate product supply and minimize waste
- Collaborate with department heads and crew to resolve operational issues and improve efficiencies
- Train, coach, and develop culinary staff to achieve high performance and guest satisfaction
