Job Requirements
- associate degree or equivalent experience
- minimum 5 years of progressive culinary or kitchen management experience
- hands-on chef experience
- knowledge of food safety and sanitation regulations
- ability to manage budgets and control costs
- strong leadership and team management skills
- proficient with computers including Microsoft Office and email
- willingness to participate in client satisfaction activities
- ServSafe certification preferred
Job Qualifications
- associate degree or equivalent experience
- minimum 5 years of progressive culinary or kitchen management experience depending on formal degree or training
- extensive catering experience is a plus
- experience in high volume, complex foodservice operations is highly desirable
- institutional and batch cooking experience
- hands-on chef experience
- comprehensive knowledge of food and catering trends focusing on quality, production, sanitation, food cost controls and presentation
- proficiency with computers including Microsoft Office, Outlook, email and the internet
- willingness to participate in client satisfaction programs or activities
- ServSafe certification is highly desirable
Job Duties
- plan regular and modified menus according to established guidelines
- follow standardized recipes, portioning and presentation standards
- train kitchen staff in food preparation, safe handling, equipment operation, food safety and sanitation
- establish and maintain cleaning and maintenance schedules
- maintain inventory of food and non-food supplies
- make decisions regarding utilization of leftover food products
- comply with federal, state and local health and sanitation regulations
- lead daily culinary production including food quality and presentation
- determine food presentation and create decorative food displays
- provide direction on menu development based on product availability
- seek out sources for fresh food and monitor produce and meat for freshness
- maintain product consistency by inspecting seasonings, portion and appearance
- research customer preferences to develop menus
- prepare and cook various foods
- demonstrate new cooking techniques and equipment
- supervise and coordinate cooks and food preparation workers
- ensure compliance with health, safety and sanitation standards
- provide guidance and performance monitoring
- communicate importance of safety procedures
- monitor quality of raw and cooked food products
- enforce food safety and sanitation guidelines
- maintain purchasing, receiving and food storage standards
