Job Duties
- Maintain a strong, consistent presence on the dining floor during all key service periods
- Personally engage with guests to build relationships, remember preferences, and nurture repeat visits - embodying Italian hospitality with charm and warmth
- Oversee all service touchpoints to ensure flawless execution in alignment with Forbes Five-Star and Waldorf Astoria standards
- Anticipate guest needs and coordinate seamlessly with the culinary and sommelier teams to deliver thoughtful, personalized experiences
- Lead by example in the art of table presence, conversation, and pacing to elevate the overall dining journey
- Conduct pre-shift briefings, menu tastings, and ongoing service workshops to ensure deep knowledge of the menu, ingredients, provenance, and Italian culinary philosophy
- Continuously train and coach the team in Forbes service standards, body language, and storytelling that conveys the Baldi brand
- Mentor service team to enhance confidence, finesse, and emotional intelligence in guest interactions
- Collaborate with the culinary and beverage directors to ensure synergy between service delivery, timing, and guest experience
- Oversee daily dining room operations with an obsessive eye for detail - table settings, pacing, flow, and ambiance
- Anticipate operational challenges and proactively reallocate support to maintain smooth, elegant service
- Partner with the leadership team to manage floor plans, VIP coordination, and special event execution
- Support all service needs including VIP arrivals, private dining, and wine service oversight
- Ensure the operation is appropriately staffed by adjusting team member schedules and covering callouts to maintain seamless service
- Lead with presence, professionalism, and humility, creating a culture of pride and ownership
- Inspire colleagues to deliver genuine Italian warmth with every interaction
- Foster teamwork, mutual respect, and a culture of continuous improvement
- Serve as an ambassador of both Chef Baldi's vision and the Waldorf Astoria brand
- Support other outlets within the hotel when needed
- Assume leadership of the restaurant in the absence of the General Manager, including scheduling and payroll duties
