Job Requirements

  • High school diploma or equivalent
  • Two years experience in a supervisory capacity in a skilled nursing care center, hospital or related medical center
  • Certification from an accredited dietetic training course approved by relevant professional associations

Job Qualifications

  • High school diploma or equivalent
  • Certification in dietetic training approved by the Association of Nutrition and Foodservice Professionals or the Academy of Nutrition and Dietetics
  • Two years experience in a supervisory role in a skilled nursing care center, hospital or related medical center
  • Customer service oriented
  • Training in cost control, food management, and diet therapy
  • Basic computer skills

Job Duties

  • Interview patient and family to obtain food preferences, habits, diet history and other nutrition information
  • Complete clinical documentation in medical records to comply with regulatory guidelines
  • Prepare for visits from Registered Dietitians and implement recommendations
  • Review diet orders to ensure accurate service according to menus
  • Document patient cultural backgrounds affecting food consumption
  • Monitor freezer and refrigerator temperatures and maintain documentation
  • Conduct inventory, purchase food and supplies and monitor receipt compliance
  • Maintain proper storage, preparation, distribution and serving of food under sanitary conditions
  • Supervise tray line service and conduct tray audits ensuring compliance with diet orders
  • Follow procedures for serving partner meals
  • Supervise cleaning procedures for kitchen equipment
  • Oversee operation of major kitchen equipment
  • Monitor food production to maintain nutritive value and regulatory compliance
  • Maintain budgetary compliance according to company policies
