Job Requirements

  • Willingness to work early morning shifts, evenings, holidays, and weekends
  • Ability to pass a physical examination
  • Successful completion of fingerprinting, psychological assessment, and background investigation
  • Maintain any required licenses or certifications in good standing
  • Experience in large-scale meal preparation
  • Ability to adhere to correctional facility protocols
  • Good communication and leadership skills

Job Qualifications

  • Equivalent to the completion of the twelfth grade, preferably supplemented by specialized culinary training
  • Minimum of three years' experience preparing, cooking, baking, and serving meals in large institutions or commercial kitchens
  • At least six months of experience in a correctional institution kitchen
  • Ability to supervise and train incarcerated persons
  • Valid California Driver's License

Job Duties

  • Direct and participate in the preparation, cooking, baking, and serving of meals in a large institutional kitchen
  • Receive, inspect, and conduct inventory of food items and kitchen, laundry, and cleaning supplies
  • Train and direct the work of incarcerated persons assigned to kitchen and laundry duties
  • Maintain kitchen and storage areas in sanitary and safe condition
  • Schedule and coordinate kitchen duties to meet meal production needs
  • Ensure compliance with health and safety regulations
  • Assist in ordering supplies and managing inventory levels
